Broccoli-Date Salad

Ingredients

1 head Broccoli
1 Red Bell Pepper
1 bunch Green Onions
1/2 box chopped Dates

Dressing Ingredients

2 Tbls Vinegar
1/4 cup Sugar
1/2 cup Oil
1/4 tsp each Dried Mustard, Celery Seed and Salt


Note: Prepare 2-3 hours ahead.

Broccoli-Date Salad

Directions

In a large pot, heat the oil. Add the onion and garlic and saute over medium-low heat until clear. Add the tomato paste and fry for a few minutes. Add the zucchini and squash and continue cooking gently for about 10 minutes. Add the yams, the diced tomatoes, cinnamon, salt and pepper. Continue cooking another 10-15 minutes.

Wash broccoli and separate into small, bite-sized pieces. Slice red bell pepper and green onions into 1/2 to 1-inch pieces Separate dates if stuck together and toss with vegetables, then add dressing and toss again.

Note: Assemble 2-3 hours ahead of time and toss frequently.
